Parma Wrapped Chicken
Ingredients:
1x Skinless chicken breast per person
2x slice of Parma ham per person
100g mixed wild mushrooms, sliced
1x small onion finely diced
Shot of brandy (optional)
200ml double cream
Oil for frying
Salt and pepper
Method:
On a board lay 2 pieces of ham end to end and place the chicken on top, pinch on end of the ham around the chicken and roll along the board, put on a greased tray so that the open end of the ham is on the bottom.
Put the chicken in a preheated oven at 200°c for 25-30 mins
Heat a little oil in a heavy based pan and add the onion and mushrooms, cook until most of the released juices have evaporated, Add the brandy if you are using it and boil rapidly for 30 seconds, Add the cream and reduce until it coats the back of a spoon, season to taste, keep warm.
Remove the chicken from the oven and cut into 3 or 4 pieces (this make for nice presentation and also give an opportunity to make sure it's cooked through)
Pour a little sauce on the bottom of a plate and arrange the sliced chicken on top.
This is an impressive recipe to serve at a dinner party to friend or family, Perfect served with creamy mashed potato or cook the chicken the day before and serve cold with salad.
